Irish Potato Farls

A simple and hearty traditional Irish bread made with mashed potatoes, cooked in butter until crispy on the outside and soft inside.

Ingredients
6 items- Boiled PotatoesBoiled potatoes, still warm
- ButterFor the dough
- 1 tspBaking Soda
- FlourPlus extra for dusting
- SaltTo taste
- Black Pepper(optional) — For serving (optional), freshly ground
Method
- Mash the boiled potatoes while still warm (not hot).
- Add the butter and mix well until incorporated.
- Add one level teaspoon of bicarbonate of soda and mix to combine.
- Add most of the flour and salt, then bring together to form a dough, reserving a little flour for dusting.
- Dust a work surface with flour, transfer the dough, and divide it into four equal wedges.
- Melt a knob of butter in a frying pan over medium heat.
- Place the wedges in the pan and cook for 4–5 minutes on each side until golden brown and crispy.
- Serve hot, optionally topped with a pat of butter, a pinch of salt, and freshly ground black pepper.
