Focaccione with Cherry Tomatoes, Puntarelle, Burrata and Anchovies

A Roman-style focaccione with a super-hydrated dough (80% hydration), topped with cherry tomatoes, oregano, olives, and red onion, baked until golden, then finished with Cantabrian anchovies, puntarelle, and creamy burrata.

Ingredients

- Cherry Tomatoes
- Oregano
- Extra Virgin Olive Oil
- Pitted Olives
- Red Onion
- Salt
- AnchoviesCantabrian anchovy fillets
- Puntarellesoaked in cold water
- Burratinatorn into pieces
Method
- Take a pre-made dough at 80% hydration and gently press it onto an oiled baking sheet, stretching to the edges.
- Scatter cherry tomatoes over the dough.
- Season with dried oregano, salt, and a generous drizzle of extra virgin olive oil.
- Add pitted olives and slices of red onion.
- Bake in a preheated oven at 260°C for 5 minutes on the bottom rack, then move to the middle rack and continue baking until golden.
- Remove from oven, drizzle with more olive oil, and sprinkle with salt and oregano.
- Let cool slightly.
- Place anchovy fillets on top.
- Top with soaked puntarelle and torn burrata.
- Finish with a final drizzle of olive oil.
