A traditional Italian frittata made with leftover spaghetti in tomato sauce, eggs, cream, and Parmesan. Cooked in an iron pan until crispy and golden.

Ingredients
9 items- 350 gSpaghetti
- 300 mlTomato PassataUsed to cook the spaghetti
- 4 pcsEggs
- CreamAdds creaminess
- 50 gGrated Parmigiano Reggiano
- Extra Virgin Olive OilFor cooking
- SaltTo taste
- PepperTo taste
- BasilFresh leaves, for the spaghetti
Method
- In a bowl, beat the eggs. Add cream, grated Parmesan, salt, and pepper. Mix quickly with a whisk.
- Add the leftover spaghetti al pomodoro e basilico to the egg mixture and mix well to combine.
- Heat a drizzle of olive oil in an iron or steel pan over medium heat.
- Pour the pasta mixture into the pan and flatten it with a rubber spatula.
- Cover and cook for about 10 minutes on each side, until the frittata is golden and crispy on the outside.
- (Optional) Let it cool before serving, but it can be eaten hot as well.
