Ingredients

- 1 pcsPotato
- 1 pcsPumpkin
- Olive OilFor sautéing
- SaltTo taste
- PepperTo taste
- 1 tbspWaterSplash
- 6 pcsEggApproximate, based on typical frittata
- 50 gParmigiano ReggianoPlus extra for serving
- 1 tbspWhole MilkSplash, for fluffiness
Method
- Slice the onion and sauté in oil.
- Peel and slice the potato, add to the pan and cook until golden.
- Peel and slice the pumpkin, remove seeds, add to the pan.
- Season with salt and pepper, add a splash of water, cover and cook for 5 minutes.
- In a bowl, beat the eggs with Parmesan, salt, pepper, and a splash of whole milk.
- Add the cooked vegetables to the egg mixture and mix well.
- Pour the mixture back into the pan over very low heat, cover, and cook for 8-10 minutes until set on top.
- Flip the frittata and cook for another minute on the other side.
- Serve with extra Parmesan on top.
