Cauliflower and Sausage Fritters

Delicious cauliflower and sausage fritters, perfect as an appetizer or aperitivo for the holidays. Crispy on the outside, soft inside.

Ingredients
10 items- 1/2 pcsCavolfiore (di grandezza media)
- 150 gSausage
- 400 mlBrodo di cottura del Cavolfiore
- 400 gFlour
- 10 gBrewer's Yeast8-10 grams
- 15 gSalt
- Black Pepperto taste
- 50 gGrana Padano
- Extra Virgin Olive Oilto taste
- Frying Oilto taste
Method
- Clean the cauliflower and cut it into florets. Cook in boiling water until tender.
- Meanwhile, remove the casing from the sausage and brown it in a non-stick pan until well seared.
- When the cauliflower is cooked, add it to the pan with the sausage. Crush everything together until reduced to small pieces.
- Let it cook briefly to dry out slightly.
- Transfer the mixture to a bowl. Add salt, pepper, grated cheese (Grana Padano), and the cauliflower cooking water.
- Add the brewer's yeast and mix. Use your hands to further crush any larger cauliflower pieces.
- Add the flour and mix to form a sticky dough (the dough should be quite sticky).
- Cover with plastic wrap and let it rise for some time.
- Heat abundant oil for frying. Wet a spoon in the oil, scoop up some batter, and fry a few fritters at a time, turning to brown evenly on all sides.
- Drain on paper towels and serve. Can be accompanied with your favorite sauce.
