Crispy broccoli fritters made with broccoli rabe, flour, sparkling water, and a touch of bicarbonate, fried until golden and served with grated Pecorino Romano.

Ingredients
8 items- 300 gBroccoli RabeBroccoli rabe, cleaned
- 150 gFlourAll-purpose flour
- 200 mlSparkling WaterSparkling water
- Baking SodaA pinch of bicarbonate of soda
- Chili PepperChili pepper, to taste
- 1 pcsGarlic1 clove, grated
- Seed OilFor frying, enough to reach 180°C
- Pecorino RomanoGrated, for serving
Method
- Clean the broccoli rabe by removing the leaves and keeping the stems.
- Boil the broccoli rabe in salted water for 2 minutes.
- Drain and immediately transfer to ice water to stop cooking.
- Squeeze the broccoli rabe dry and chop finely.
- Mix the chopped broccoli with all-purpose flour and sparkling water.
- Add a pinch of bicarbonate of soda to help them puff up.
- Season with chili pepper and grated garlic.
- Heat seed oil to 180°C (350°F).
- Wet a spoon and drop spoonfuls of batter into the hot oil.
- Fry for 3-4 minutes until golden and crispy.
- Serve hot with grated Pecorino Romano cheese.
