A light and healthy version of the classic Roman semolina gnocchi, made with vegetable broth instead of milk and butter, then baked with olive oil, Parmesan, and pecorino. Perfect for those with digestive sensitivities.

Method

  1. Prepare a vegetable broth with carrots, celery, and onion; keep hot.
  2. In a pot, pour the hot broth and gradually whisk in the semolina until thickened and smooth.
  3. Remove from heat and stir in the grated Parmesan and pecorino cheeses.
  4. Add one whole egg and one egg yolk, mix well. Season with a pinch of salt.
  5. Transfer the mixture onto a sheet of parchment paper and roll it into a compact log (like a chocolate salami).
  6. Wrap tightly and refrigerate for at least 2 hours until firm.
  7. Once firm, unwrap and slice the log into discs about 1 cm thick.
  8. Arrange the discs on a baking sheet lined with parchment paper.
  9. Drizzle with olive oil and sprinkle with more Parmesan and pecorino.
  10. Bake in a preheated oven at 180°C (350°F) until golden brown, about 15–20 minutes.
  11. Serve warm.
