Chicken Burger with Pumpkin and Caramelized Onions

A moist chicken burger (or thigh meat) with sweet caramelized onions, roasted pumpkin, taggiasche olives, zucchini flowers, and melted caciotta cheese, on a toasted bun.

Method
- Peel and thinly slice the onions. Melt butter in a pan, add the onions and a pinch of salt. Cook until softened.
- Add diced pumpkin to the onions. Continue cooking until the pumpkin is tender. Add a crushed garlic clove and chili pepper.
- After about 10 minutes, add a teaspoon of sugar and a splash of white vinegar. Cook until caramelized. Stir in taggiasche olives and turn off the heat.
- Season the chicken (choose either chicken thighs/supremes or pre-made chicken patties) with salt, pepper, fresh thyme (or rosemary/sage), a garlic clove sliced in half, and a drizzle of oil. Massage to infuse.
- Cook the chicken in a hot pan with oil until golden and cooked through. For whole cuts, cook skin-side down first, then turn.
- Slice the bread in half and toast it whole. Then cut and lightly grill the cut sides with a little butter until fragrant.
- Assemble the burger: on the bottom bun, spread the onion-pumpkin mixture, add some olives, then the chicken (sliced if using whole cuts), arrange zucchini flowers, top with slices of caciotta cheese, and close with the top bun.
- Press lightly and serve.
