Ingredients

- LemonJuice of 1 lemon
- ParsleyChopped
- 2 tbspTahina (Pasta di Sesamo)
- 1 pcsGarlicClove, crushed
- SaltTo taste
- Chickpea Cooking WaterAs needed
- Extra Virgin Olive Oil(optional) — For drizzling
- Sweet Paprika(optional) — To taste
- Cumino in Polvere(optional) — To taste
- Fresh Chili Pepper(optional) — Chopped
- Pane Arabo(optional) — For serving
Method
- Soak the dried chickpeas for 12 hours.
- Drain and cook the chickpeas in unsalted water for about 1.5 hours until tender.
- Drain the chickpeas, reserving some of the cooking water.
- In a blender, add half of the cooked chickpeas with a little of the reserved water. Blend until smooth.
- Add lemon juice, tahini, crushed garlic, and chopped parsley. Blend again.
- Add more cooking water if needed to achieve the desired creamy consistency.
- Season with salt to taste and continue blending.
- Taste and adjust salt and lemon juice as needed.
- Transfer the hummus to a serving plate.
- Drizzle generously with extra virgin olive oil, sprinkle with sweet paprika, ground cumin, and fresh chili.
- Serve with Arabic bread or flatbread.
