Turkish Chickpea Salad

A vibrant, spice-infused chickpea salad with sautéed peppers, onions, sun-dried tomatoes, and a tangy lemon-apple cider dressing. Perfect as a main dish or hearty side.

Ingredients
15 items- Precooked Chickpeaspre-cooked or canned, drained and rinsed
- Paprica in Polveresweet paprika
- Saltto taste
- Olive Oilextra virgin, for cooking
- Sweet Pepperssweet bell peppers, any color
- Onions1 medium onion
- Garlic2 cloves
- Dried Tomatoessun-dried tomatoes, chopped
- 1/2 tspCumino in Polvereground
- 1/2 tspChili Powder(optional) — chili powder, adjust to taste
- Fresh Basila handful, chopped
- Fresh Parsleya handful, chopped
- Apple Cider Vinegara splash, to taste
- Lemon Juicefreshly squeezed, to taste
- Lemon(optional) — wedges for serving
Method
- Heat a little oil in a pan, add the pre-cooked chickpeas, paprika powder, and a pinch of salt. Cook for 4–5 minutes, stirring, until fragrant.
- Remove the chickpeas from the pan and set aside.
- Slice the sweet peppers into thin strips.
- Slice the onions thinly.
- In the same pan, heat a little oil and add the onions and minced garlic. Sauté until softened, about 3–4 minutes.
- Add the pepper strips to the pan. Cook until they are softened but still slightly crunchy.
- Add chopped sun-dried tomatoes, ground cumin, and chili powder (adjust to taste). Cook for another few minutes.
- Turn off the heat and let the pepper mixture cool completely.
- Meanwhile, chop fresh basil and parsley.
- Once cooled, transfer the pepper mixture to a large bowl.
- Add the reserved chickpeas, chopped herbs, a splash of apple cider vinegar, and a squeeze of lemon juice. Mix well.
- Taste and adjust seasoning with more salt, vinegar, or lemon juice as needed.
- Serve topped with additional fresh herbs and lemon wedges.
