A fridge-cleaner chicken salad, perfect for a midnight snack. Uses leftover chicken cacciatore, fresh spinach, crunchy hazelnuts, and a yogurt-mustard dressing.

- Spinacini FreschiBaby spinach leaves

- Unwaxed LemonUntreated lemon for zest
- Coarse SaltCoarse salt
- Black PepperBlack pepper
- Olive OilExtra virgin olive oil
- Yogurt InteroWhole milk yogurt

Method
- Remove the bones from the leftover cooked chicken and shred it with your hands.
- Add fresh spinach leaves and gently squeeze them to wilt slightly.
- Coarsely chop the hazelnuts and add them to the salad.
- Grate the zest of an untreated lemon over the salad.
- Add a pinch of coarse salt and a little freshly ground pepper.
- Drizzle with a good quality olive oil and toss to combine.
- In a small bowl, mix whole yogurt with a teaspoon of mustard to make the dressing.
- Taste the dressing and adjust seasoning if needed.
- Pour the dressing over the salad and mix thoroughly.
- Serve immediately or let it rest for a few minutes to absorb the flavors.
