Fried Swordfish Rolls

A simple and flavorful fried antipasto or aperitivo made with thin slices of swordfish stuffed with a bread and mozzarella filling, then breaded and fried. Served with a tomato and olive sauce.

Method

  1. Cut the stale bread into small cubes, removing the crust.
  2. Put the bread in a bowl, add water, and squeeze it with your hands to break it up.
  3. Cut the mozzarella into cubes and add it to the bread.
  4. Add oregano, salt, black pepper, and a drizzle of olive oil. Mix well.
  5. Prepare the swordfish: remove the skin and cut into thin slices.
  6. Take a slice of swordfish, place a small ball of filling on the widest part, roll it halfway, then cut the slice. Secure with a toothpick.
  7. Prepare the batter: mix water and flour until you get a light consistency.
  8. Dip each roll into the batter, then coat with breadcrumbs or panko.
  9. Heat oil for frying.
  10. Fry the rolls until golden brown.
  11. Prepare the sauce: in a small pan, heat oil and garlic, then add tomato sauce, olives, chili pepper, salt, and oregano.
  12. Serve the rolls with the sauce, removing the toothpicks.
