Linguine with a sauce of mantis shrimp, a humble yet flavorful dish. The mantecatura creates a perfect creamy sauce.

Ingredients
9 items- Canocchie (Cicale di Mare)about 500g or as needed
- 1 pcsGarlichalved, germ removed
- White Winea splash for deglazing
- Pomodori da Terinismall tomatoes, halved
- Waterfor sauce and pasta cooking
- Saltto taste
- Linguinehigh-quality bronze-drawn pasta
- Parsleychopped
- Extra Virgin Olive Oilfor cooking and raw finishing
Method
- Cut the mantis shrimp along the carapace with scissors.
- Heat extra virgin olive oil in a pan.
- Sauté the halved garlic (germ removed).
- Add the mantis shrimp and deglaze with white wine.
- Add the halved tomatoes.
- Add a ladle of water, cover and cook over low heat.
- After a few minutes, crush the shrimp (especially the head) and tomatoes with a ladle.
- Remove the garlic and season with salt.
- Remove the shrimp (to prevent overcooking).
- Cook the linguine in salted boiling water.
- Drain the pasta al dente into the sauce.
- Toss the pasta in the sauce over high heat, adding pasta water little by little.
- Add parsley.
- At the end, add raw extra virgin olive oil and toss.
- Plate with the shrimp on the side.
