A classic homemade mayonnaise recipe using a stand mixer. Eggs, sunflower oil, extra virgin olive oil, lemon juice, and vinegar create a thick and creamy emulsion. Made the traditional way with care to avoid curdling.

- 600 gSunflower Oil
- 100 gExtra Virgin Olive Oil
- 1/2 pcsLemonjuice of half a lemon
- White Wine Vinegarto taste
Method
- In the bowl of a stand mixer, add one whole egg and two egg yolks. Add a pinch of salt.
- Start the mixer on low speed and slowly drizzle in the sunflower oil in a thin, steady stream.
- Once the emulsion begins to form (the egg starts to thicken), you can increase the flow of oil. Continue until all sunflower oil is incorporated.
- Add a small amount of the extra virgin olive oil (use a delicate variety to avoid overpowering the flavor).
- Add the juice of half a lemon.
- Add a splash of white wine vinegar.
- Add the remaining extra virgin olive oil.
- Continue mixing until the mayonnaise is thick, smooth, and well emulsified.
