A homemade version of the iconic McDonald's chicken McNuggets, extra crispy thanks to a double frying technique, with a slightly more pronounced garlic flavor.

Ingredients

- 150 gFlourDivided: 100g for coating, 50g for batter
- 150 gCorn Starch (Maizena)Divided: 100g for coating, 50g for batter

- Frying Oil (Seed Oil For Frying)Sufficient for deep frying
Method
- Clean the chicken breast and cut into pieces. Blend with onion flakes, garlic powder, salt, and pepper until a compact paste forms.
- Take small portions (about 5g each) and flatten into nugget shapes (round, square, etc.).
- Place the nuggets in the freezer for at least 1 hour until completely frozen.
- For the first coating: mix 100g flour and 100g cornstarch.
- For the batter: beat 1 egg with a splash of milk. In a separate bowl, combine 50g flour, 50g cornstarch, and ice-cold sparkling water to form a thin batter.
- Coat each frozen nugget first in the flour-cornstarch mix, then dip in the egg-milk mixture, then coat with the batter.
- Fry in hot oil (170-180°C) until golden brown. Remove and let rest.
- Reheat the oil to a higher temperature (190°C) and fry again until extra crispy and deeply golden.
- Serve immediately.
