Traditional Neapolitan recipe for baby octopus cooked with tomatoes, capers, and parsley.

Ingredients
9 items- Baby Octopussmall octopus
- Garlic1 clove
- Extra Virgin Olive Oilto taste
- Chili Pepper(optional) — to taste
- White Winea splash
- Peeled Tomatoescanned, about 400g
- Desalted Capersdesalted capers
- Saltto taste
- Parsleychopped
Method
- Clean the baby octopus: remove the mouth and eyes, then rinse under running water.
- Sauté a crushed garlic clove in extra virgin olive oil; add chili pepper if desired.
- Add the octopus and let them brown.
- Deglaze with white wine.
- Remove the garlic and add the canned tomatoes. Do not salt yet.
- Lower the flame, cover, and cook.
- After about 10 minutes, remove the lid and add desalted capers.
- Continue cooking uncovered until the sauce thickens.
- Adjust salt, turn off the heat, and add chopped parsley.
- Let rest a few minutes before serving.
