Mugliatelli (Kid Intestines with Raisins and Goat Cheese)

A traditional dish from the 1990s made by wrapping a mixture of raisins, goat cheese, and parsley in kid's caul fat, then wrapping it again with kid's intestines. Fried with garlic and tomato, served as a flavorful second course.

Method

  1. Open the kid's caul fat.
  2. Place raisins, goat cheese, and parsley on the caul fat.
  3. Wrap the filling tightly with the caul fat.
  4. Wrap the bundle with the kid's intestines to secure.
  5. In a pan, sauté garlic in oil.
  6. Add the mugliatelli and brown them.
  7. Add crushed tomatoes (pelata) and cook briefly.
  8. Serve.
