A Roman-style pasta dish featuring whole scorpion fish simmered in a rich tomato sauce, served over paccheri pasta.

Ingredients

- ParsleyFresh parsley, stems and leaves
- Extra Virgin Olive OilExtra virgin olive oil
- TomatoesFresh tomatoes, crushed
- SaltSalt to taste
- Fresh Chili PepperFresh chili pepper, a piece
- WaterWater, for deglazing and cooking
- PaccheriPaccheri pasta
Method
- Heat extra virgin olive oil in a pan and add garlic cloves and parsley stems.
- Add the whole scorpion fish and brown it well on both sides.
- Deglaze the pan with a splash of water or white wine.
- Crush the tomatoes and add them to the pan along with salt and a piece of fresh chili pepper.
- Add a little water and cook for half an hour, occasionally basting the fish.
- Remove the fish from the pan and let it cool slightly.
- Meanwhile, chop fresh parsley.
- Once the fish is cool enough to handle, remove the bones and flake the flesh.
- Cook the paccheri pasta in salted boiling water until al dente.
- Add the cooked paccheri to the sauce and toss well to coat, letting the pasta absorb the sauce.
- Thicken the sauce if needed by cooking a bit longer.
- Turn off the heat, sprinkle with chopped parsley, and serve.
