Pancetta and Beans in Devil's Style

A fiery Italian dish featuring fresh pancetta boiled then crisped, served with mixed beans in a spicy sauce loaded with chilli peppers, garlic, tomato paste and vinegar. Perfect for lovers of heat.

Method

  1. Cut fresh pork belly (with skin) into pieces.
  2. Place pieces in cold water with black peppercorns and coarse salt. Cook uncovered for at least 1.5 hours, skimming occasionally.
  3. Let the pancetta cool slightly, then transfer to a baking sheet lined with parchment paper, skin side up. Roast under the broiler until the skin is crispy (about 15 minutes at max power, then 5 minutes standing upright).
  4. In a large casserole, heat olive oil. Slice a couple of garlic cloves and add them. Add various chili peppers: 2-3 small hot chilies whole, sliced red chili, sliced yellow chili. Sauté to infuse flavor.
  5. Add the pre-cooked mixed beans (borlotti, cannellini, red beans).
  6. Dissolve a bit of tomato paste in hot water and add to the beans.
  7. Add a splash of vinegar and salt. Taste and adjust.
  8. Cut the crispy pancetta into pieces and add to the beans.
  9. Let sit off heat for 2 minutes to allow flavors to meld.
  10. Serve immediately.
