Lamb and Broccoletti Sandwich on Crunchy Roman Pizza

A crunchy Roman pizza base filled with a lamb burger seasoned with pecorino, mint, and pepper, topped with sautéed broccoletti, scamorza cheese, and a final layer of pizza. A hearty and flavorful street-food style sandwich.

Method

  1. Prepare the broccoletti: trim the tough outer leaves and slice the thicker stems crosswise to speed cooking. Parboil the broccoletti in salted boiling water until tender (about 5-7 minutes). Drain well.
  2. Meanwhile, make the lamb burger: finely chop the lamb meat (abbacchio) with a knife until minced. Mix with grated pecorino, freshly ground black pepper, a pinch of salt, and fresh mint torn by hand. Shape into a thick patty using a ring mold.
  3. Cook the broccoletti: heat olive oil in a non-stick pan, add a split garlic clove and a pinch of chili pepper. Sauté the boiled broccoletti until lightly golden and well flavored. Remove the garlic and set aside.
  4. In a grill pan or heavy skillet, sear the lamb patty over high heat for 2-3 minutes per side, until nicely charred but still pink inside. (The chef prefers it rosé.)
  5. In the same pan, add slices of scamorza cheese and let it melt slightly.
  6. Assemble the sandwich: take a piece of crispy Roman pizza (or any thick flatbread). Place the lamb patty on the pizza, top with the sautéed broccoletti, then the melted scamorza. Cover with another piece of pizza and press down gently.
  7. Optional: heat the assembled sandwich in the pan for a minute on each side to crisp further.
  8. Serve hot, cut in half if desired.
