Method
- Dredge the thin cutlet in flour, shaking off excess.
- Beat eggs with a splash of water. Dip the cutlet deep into the egg mixture.
- Fry the breaded cutlet in plenty of extra virgin olive oil until golden and crispy. Keep it suspended to stay crisp.
- Slice a baguette. Fill with cooked ham and cheese. Heat the sandwich in the oven or on the barbecue until the cheese melts.
- Grill spinach with a drizzle of oil and a pinch of salt until wilted.
- Assemble the sandwich: place the fried cutlet on the bread, top with grilled spinach and a few wilted cherry tomatoes.
- Enjoy immediately.
