A classic Roman street food: a panino filled with a fluffy potato and artichoke frittata, crispy on the outside and soft inside.

Method

  1. Peel and slice the potato thinly.
  2. Heat oil in a pan and fry the potato slices until golden.
  3. Clean and slice the artichokes thinly.
  4. In a bowl, beat the eggs with grated pecorino and parmigiano, salt, and chopped mentuccia.
  5. Add the fried potatoes and sliced artichokes to the egg mixture and mix well.
  6. Heat more oil in a pan and pour in the egg mixture. Cook until set and golden on one side, then flip and cook the other side.
  7. Cut the bread rolls in half and fill with the frittata.
  8. Serve immediately.
