A classic Roman street food: a panino filled with a fluffy potato and artichoke frittata, crispy on the outside and soft inside.

Ingredients

- 1 pcsPotato
- 100 gMisto di Pecorino e Parmigiano
- 2 pcsCarciofo Romanesco
- 6 pcsEgg
- Mentucciato taste
- Saltto taste
- Olive Oil
- Garlic1 clove and a half, to taste
Method
- Peel and slice the potato thinly.
- Heat oil in a pan and fry the potato slices until golden.
- Clean and slice the artichokes thinly.
- In a bowl, beat the eggs with grated pecorino and parmigiano, salt, and chopped mentuccia.
- Add the fried potatoes and sliced artichokes to the egg mixture and mix well.
- Heat more oil in a pan and pour in the egg mixture. Cook until set and golden on one side, then flip and cook the other side.
- Cut the bread rolls in half and fill with the frittata.
- Serve immediately.
