A hearty Italian sandwich filled with slow-roasted pork shank braised in beer, served with roasted garlic cream on a soft bread roll.

Ingredients

Method
- Get two nice pork shanks from your butcher.
- Make small incisions on the shanks.
- Season the shanks with garlic, rosemary, sage, bay leaf, sweet smoked paprika, flaky salt, and lots of love. Massage them well.
- Bake in the oven at 150°C for 2.5 hours.
- Halfway through the cooking, open two cold beers and pour them over the meat to give it a bath.
- After 2.5 hours, put the shanks back in the oven at 240°C for 15 minutes.
- Take a soft, crumbly bread roll from the baker and dip it in the sauce so it soaks up the flavor.
- When the shanks are ready, take the two roasted garlic heads and squeeze them to make a creamy paste.
- Shred the shank meat with your hands (be careful of the heat).
- Fill the bread generously with the shredded meat, then cut the sandwich in half.
