Italian-Style Pastrami Sandwich with Beef Strips and Fossa Cheese

A hearty sandwich featuring sautéed beef strips, sweet peppers, caramelized onions, and tangy Fossa cheese, all on a crispy pan pizza bread. Inspired by Italian pastrami, this is a perfect street-food style panino.

Ingredients
12 items- Piccadilly TomatoesCut in half
- Garlic1 clove, peeled
- Olio MarchigianoExtra virgin olive oil from the Marche region; or any good quality olive oil
- OreganoFresh oregano leaves
- SaltTo taste
- Black PepperFreshly ground black pepper
- 1 pcsRed OnionMedium-sized red onion, cut into wedges
- White Wine VinegarFor blanching the onions; use about 100 ml per 1.5 liters of water
- FriggitelliSweet Italian peppers, also known as friggitelli; about a handful
- Beef StraccettiThinly sliced beef strips (ask your butcher for straccetti)
- 1 pcsPane Pan PizzaRoman-style pizza bread, round and soft
- Formaggio di Fossa di Sogliano DOPAged cheese from Sogliano, PDO; can substitute with aged pecorino if unavailable
Method
- Cut the Piccadilly tomatoes in half.
- Heat olive oil in a cast iron pan; add a garlic clove.
- Add the tomatoes, fresh oregano, salt, black pepper, and a drizzle of oil. Cover and cook until soft, forming a sauce.
- Peel the red onion. Cut it in half leaving the root base attached, then slice into wedges.
- Bring water to a boil with white wine vinegar. Add the onion wedges and blanch until softened and the red color intensifies.
- Clean the friggitelli peppers: push the stem to remove seeds and stem. Toss with olive oil.
- Grill the friggitelli on a barbecue or in a non-stick pan until charred and softened.
- Cook the beef strips on a hot griddle or pan for a few seconds per side. Season with black pepper. Do not overcook.
- Warm the pan pizza bread on the griddle until crispy and heated through.
- Assemble the sandwich: spread the tomato sauce on the bottom half of the bread. Add the grilled friggitelli, beef strips, and onion wedges. Generously grate or shave the Fossa cheese on top.
- Close the sandwich, press gently, and serve immediately.
