Method
- Clean the artichokes and place them immediately into a bowl of water with lemon juice to prevent browning.
- Cut the cleaned artichokes into quarters.
- Heat a generous amount of extra virgin olive oil in a pan.
- Place the artichokes into the pan, pressing them open slightly, and season with salt.
- Let them brown slightly, then add fresh parsley, black pepper, and a splash of white wine. Cook until tender and crispy.
- Slice the bread open and remove some of the inner crumb to make room for the filling.
- Place slices of scamorza cheese inside the bread, drizzle with extra virgin olive oil, and heat the bread until the cheese is melted and hot.
- Layer the Italian salami and the warm cooked artichokes inside the sandwich, cover, and serve hot.
