When it's hot in Tuscany, we make this: panzanella, but our way. A refreshing bread salad with tomatoes, cucumber, onion, and basil.

Ingredients
9 items- 300 gBreadstale bread recommended
- 3 pcsTomatoesnot too ripe
- 1 pcsCucumbers
- 1/2 pcsFresh Onion
- 30 mlApple Cider Vinegarfor soaking the onion
- Extra Virgin Olive Oilto taste
- Basilfresh, to taste
- Saltto taste
- Pepperto taste
Method
- Finely slice the fresh onion and soak it in cold water with apple cider vinegar to make it milder and more digestible.
- Cut the cucumber into half-moons and the tomatoes into coarse cubes.
- Cut the bread into cubes (stale bread is even better) and toast them in a pan with extra virgin olive oil until golden.
- Assemble the panzanella: add the toasted bread, drained onion, cucumber, tomatoes, fresh basil leaves, olive oil, salt, and pepper. Mix well and taste.
