Parmigiana with Stale Bread

Recipe for Parmigiana made with stale bread instead of eggplant. The bread is lightly fried in a non-stick pan and baked with tomato sauce, fiordilatte, parmigiano and basil.

Ingredients
8 items- Pane Duro (Stale Bread)Use day-old bread

- Pomodoro (Passata or Fresh)Tomato sauce
- SaltTo taste
- Fresh BasilFresh basil leaves
- Fiordilatte (Mozzarella)Diced or sliced
- Parmigiano ReggianoGrated
Method
- Heat a non-stick pan with a drizzle of olive oil and a clove of garlic.
- Add the tomato sauce, season with salt and a pinch of basil, and cook for about 5 minutes over low heat.
- Meanwhile, soak the stale bread in water, then fry it in a non-stick pan with a little olive oil until golden.
- To assemble, spread a layer of tomato sauce on the bottom of a baking dish.
- Add a layer of fried bread, then fiordilatte cheese, grated parmigiano, and fresh basil.
- Repeat for a total of three layers, pressing down gently.
- Top with remaining fiordilatte, basil, and a final drizzle of sauce.
- Bake in a preheated oven at 170°C (338°F) for about 15 minutes.
- Remove from the oven and let it rest for a few minutes before serving.
