Pasta with Anchovies and Zucchini Flowers

A simple and tasty summer first course with anchovies, zucchini flowers, mint, and salted ricotta.

Ingredients
9 items- Olive OilGenerous amount, to taste
- Anchovy FilletsTo taste, about 4-6 fillets
- GarlicSliced or whole, to taste
- 1 pcsFresh Chili PepperSliced, adjust to heat preference
- Fresh MintA few leaves, some added during cooking, some torn at the end
- Zucchini FlowersCleaned and sliced, about 6-8 flowers
- Salted RicottaGrated, to taste, for finishing
- Pasta (pennette)Small penne or similar shape, about 80-100g per person
- SaltFor the pasta water
Method
- Bring a pot of water to a boil and add salt.
- Cook the penne pasta in the boiling water until al dente.
- In a pan, heat plenty of olive oil over medium-low heat.
- Add anchovy fillets and stir until they dissolve into the oil.
- Add sliced garlic and sliced fresh chili pepper.
- Add a few fresh mint leaves.
- Clean the zucchini flowers by removing the inner pistil and the outer sepals, then slice them thinly.
- When the pasta is al dente (a little earlier than fully cooked), drain it and transfer it directly to the pan with the sauce.
- Toss the pasta in the sauce and let it absorb the flavors for a minute.
- Add the sliced zucchini flowers and turn off the heat.
- Add torn fresh mint leaves and grated salted ricotta cheese; mix well.
- Serve with additional grated ricotta salata and chili pepper slices if desired.
