A simple but flavorful pasta dish with garlic, fresh mint, pecorino cheese, and chili pepper, perfect for a comforting meal.

Ingredients
6 items- 200 gPasta Bavette/Linguine
- Mentuccia Frescato taste
- Garlicgood quality Italian garlic
- Olive Oilgood quality olive oil, generous amount
- Fresh Chili Pepperto taste
- Pecorino Romanoto taste, grated
Method
- Bring a large pot of salted water to a boil.
- Cook the pasta in the boiling water until al dente.
- In a large pan, pour a generous amount of olive oil and heat over medium-high heat.
- Add the mint stalks to the oil, break them to release their aroma, then remove the stalks.
- Add sliced garlic to the oil and cook until golden.
- Add sliced fresh chili pepper.
- Pour a ladle of pasta water into the pan to deglaze and extract flavors.
- Drain the pasta al dente and transfer it directly to the pan.
- Add the mint leaves and toss well.
- Add grated pecorino cheese and continue tossing to create a creamy emulsion.
- Serve immediately with extra pecorino and mint leaves.
