- Zest and juice the lemon. Set aside.
- In a food processor, combine arugula, Parmigiano Reggiano, Pecorino Romano, garlic, pine nuts, lemon zest, lemon juice, and extra virgin olive oil. Blend until smooth and creamy.
- Cook the pasta in salted boiling water until al dente.
- Drain the pasta, reserving a little pasta water. Toss the pasta with the pesto, adding a splash of pasta water if needed to loosen the sauce.
- Serve immediately, garnishing with extra Parmigiano or pine nuts if desired.
