Pasta with Raw Tomato Sauce

An incredibly quick and fresh pasta recipe, perfect for both children and adults. The raw tomato sauce is light, fragrant, and made with just a few quality ingredients: sweet cherry tomatoes, basil, garlic, and extra virgin olive oil. The pasta cooks in just one minute, making this a perfect last-minute meal.

Ingredients
7 items- 70 gMaccheroncini di CampofiloneVery thin, quick-cooking pasta. Can substitute with other thin pasta like angel hair.
- 50 gPomodoro Fresco (Pomodorini Dolci)Sweet cherry tomatoes or any ripe, sweet tomato variety.
- Fresh BasilA few leaves, to taste.
- 1 pcsGarlicOne clove, used whole to infuse flavor.
- Extra Virgin Olive OilDrizzle generously to taste.
- OreganoA pinch, to taste.
- Parmigiano Reggiano(optional) — Optional, to taste.
Method
- Use a coarse grater to grate the fresh tomato over a bowl, discarding the skin. You should get a smooth pulp.
- Finely chop the fresh basil leaves.
- Add the whole garlic clove, chopped basil, and a drizzle of extra virgin olive oil to the tomato pulp. Mix well and set aside.
- Cook the maccheroncini di Campofilone pasta in boiling salted water for about 1 minute, until al dente (the pasta is very thin so it cooks quickly).
- Drain the pasta briefly (no need to reserve water) and add it directly to the bowl with the raw tomato mixture.
- Toss the hot pasta with the tomato sauce. The heat from the pasta will warm the sauce slightly but keep it fresh.
- Add a pinch of oregano and, if desired, a generous grating of Parmigiano cheese. Mix well.
- Serve immediately. Optionally, add a few fresh basil leaves on top.
