Pasta with Fish Ragù

A quick and delicious pasta dish with a fish ragù made from monkfish, cherry tomatoes, capers, and olives. Perfect for impressing guests.

Ingredients
10 items- Coda di Rospo (Rana Pescatrice)any white fish fillet works
- Garlic
- Parsleyfresh
- Chili Pepper(optional) — to taste
- Cherry Tomatoescherry tomatoes
- Desalted Capersdesalted capers
- Olivespreferably Taggiasca or other black olives
- Olive Oilextra virgin
- Saltfine sea salt
- Pasta (Linguine o Spaghetti)choose long pasta
Method
- Heat olive oil in a pan over medium-high heat.
- Add garlic, parsley, and chili pepper. Sauté briefly.
- Add cherry tomatoes, lower the heat, and cook until they soften.
- Add desalted capers, then increase heat.
- Add diced monkfish fillet. Season with salt.
- Add olives and cook gently for a few minutes. Do not overcook the fish.
- Meanwhile, bring a pot of salted water to a boil and cook pasta (linguine or spaghetti) until al dente.
- Reheat the sauce a minute before draining the pasta.
- Drain the pasta, add to the sauce with a splash of pasta water. Toss well.
- Serve with fresh parsley.
