Pasta Alla Carrettiera
A quick and tasty Sicilian pasta alla carrettiera revisited by Chef Max Mariola. Made with bucatini, anchovies, garlic, chili, dried tomatoes, pecorino cheese, and crispy breadcrumbs.

Ingredients

- Anchovies in Oil
- Breadcrumbscoarse
- Olive Oil
- Chili Pepperto taste
- Bucatini
- Dried Tomatoesdried tomatoes
- Pecorinograted
- Parsleyfresh, chopped
Method
- Grate 2 cloves of garlic into a pan with olive oil.
- Add anchovies and melt them over low heat.
- Add coarse breadcrumbs and toast until golden and crispy. Set aside.
- In the same pan, add more olive oil and 2 more cloves of garlic.
- Add a splash of water to prevent garlic from burning.
- Add chili pepper to taste.
- Boil bucatini according to package directions but remove 2 minutes before al dente.
- Transfer pasta to the pan with a little pasta water.
- Add dried tomatoes and toss.
- Turn off heat, add grated pecorino cheese, and stir until creamy.
- Add fresh parsley and mix.
- Serve topped with the crispy breadcrumbs.
