Pasta alla Norma with Bottarga

A Sicilian-inspired pasta dish combining fried eggplant, fresh tomatoes, and tuna bottarga, with garlic and basil. A twist on the classic Pasta alla Norma.

Ingredients
9 items- BasilFor infusing the pasta water and garnish
- 1 pcsEggplantsLarge eggplant cut into small cubes
- 1 pcsSpring OnionChopped
- 1 pcsGarlicWhole clove, crushed
- 4 pcsTomatoesCasalino or other ripe tomatoes, blanched and peeled
- SpaghettiSemi-artisanal spaghetti
- 1 pcsChili PepperSmall chili pepper, to taste
- Tuna BottargaTuna bottarga, chopped; most used in the sauce, some reserved for garnish
- Extra Virgin Olive OilFor frying and finishing
Method
- Blanch the tomatoes: make a cross incision on the bottom, blanch in boiling water for a few seconds, then peel and chop.
- Cut the eggplant into small cubes.
- In a large pan, heat extra virgin olive oil over medium heat. Add a clove of garlic (crushed) and chopped spring onion.
- In the same pan, fry the eggplant cubes until golden and tender. Remove and set aside.
- Add the chopped tomatoes and a little chili pepper to the pan. Cook for a few minutes.
- Remove the garlic clove from the pan.
- Meanwhile, cook the spaghetti in boiling water with a few basil leaves added for aroma.
- When the pasta is al dente, transfer it directly to the pan with the sauce. Add a splash of pasta cooking water.
- Add the fried eggplant and most of the chopped bottarga. Toss everything together.
- Finish with fresh basil leaves and a drizzle of extra virgin olive oil. Serve with the remaining bottarga grated on top.
