A hearty winter soup of pasta and beans, with a soffritto base, anchovies, chili, and pecorino. Creamy and comforting, this classic Roman-style dish is perfect for cold days.

- Pre-Cooked Borlotti BeansPre-cooked, about 400-500g drained weight
- 1 tbspTomato PasteFor toasting
- SaltTo taste
- Black PepperTo taste
- 1 pcsCrosta Di Pecorino StagionatoAged pecorino rind, adds flavor
- Fresh RosemaryA few sprigs, added at the end
- Mixed PastaMixed short pasta, or broken spaghetti/tubetti

Method
- Dice the onion finely (horizontal and vertical incisions).
- Heat a generous amount of extra virgin olive oil in a pot.
- Add the diced onion and a whole clove of garlic; sauté gently.
- Dice the celery very finely and add it to the pot; continue to sauté until soft.
- Add two anchovy fillets (in oil) and two small chili peppers; stir until the anchovies dissolve.
- Add the pre-cooked borlotti beans and a tablespoon of tomato paste; toast the paste for a minute.
- Cover with water and simmer for 5 minutes.
- Season with salt and black pepper.
- Add a piece of aged pecorino rind to the pot.
- Remove about half of the soup (beans and liquid) and blend until smooth; return the blended cream to the pot.
- Add the mixed pasta (or broken spaghetti, tubetti, etc.). Stir often to prevent sticking.
- Cook the pasta, adding a splash of water if the soup becomes too thick. It should remain soupy.
- In the last 10 minutes of cooking, add fresh rosemary sprigs.
- Serve hot, topped with freshly grated pecorino cheese.
