Pasta and beans with Colonnata lard and porcini mushrooms, a creamy and flavorful recipe.

Ingredients
12 items- Colonnata LardoIf you cannot find Colonnata lard, you can use a good guanciale (cured pork cheek).
- Onion
- Celery
- Chili Pepper
- Cherry Tomatoes
- Porcini Mushrooms
- Fagioli Borlotti Lessati e Sgocciolati
- Salt
- Pasta Mista o Corta di GragnanoUse mixed short pasta from Gragnano if possible.
- Scorza di Parmigiano
- Basil
- Pecorino Romano(optional) — Optional - if you don't like it, you can omit.
Method
- Cut the lardo (cured pork fat) into fine dice.
- Place the lardo in a pot over low heat to render the fat (no need for oil).
- Chop the onion and celery finely.
- Add chili pepper and the chopped vegetables to the pot.
- Sauté until fragrant.
- Add the cherry tomatoes.
- Add the diced porcini mushrooms.
- Add the boiled and drained borlotti beans.
- Cover with water, add salt, and bring to a boil.
- Once boiling, add the pasta.
- Cook the pasta, stirring occasionally, adding hot water if it dries out.
- Halfway through cooking, add the parmesan rind.
- Continue cooking until the pasta is al dente and the mixture is thick and creamy.
- At the end, tear fresh basil into large pieces and stir in.
- Remove from heat, grate pecorino romano on top (optional).
- Serve.
