Pasta with Potatoes and Broccoli

A simple and quick pasta dish where potatoes and broccoli are cooked together with the pasta, then combined with a flavorful base of olive oil, garlic, anchovies, and chili pepper. Finished with Parmesan cheese, it's a creamy and satisfying one-pot meal.

Method

  1. Clean the broccoli: separate the florets and finely slice the tougher stems. Set aside.
  2. Peel and dice the potatoes into small cubes (about 1 cm).
  3. In a large skillet, heat a good amount of olive oil over medium heat. Add sliced garlic, anchovies (as many as desired), and sliced chili pepper. Cook until the anchovies melt and the garlic is fragrant, but do not burn.
  4. Bring a large pot of salted water to a boil.
  5. Add the potatoes and broccoli to the boiling water. Let the water return to a boil.
  6. Add the pasta (orecchiette works well) to the same pot. Cook until the pasta is al dente, about 8–9 minutes. Reserve some pasta water before draining.
  7. Drain the pasta and vegetables (about 2–3 minutes before the suggested cooking time) and transfer them directly to the skillet with the oil mixture.
  8. Add a splash of reserved pasta water to the skillet and toss everything together over high heat to create a creamy sauce.
  9. Turn off the heat and generously grate Parmesan cheese over the pasta. Mix well.
  10. Serve immediately, with extra grated cheese and optionally a sprinkle of raw chili pepper.
