Pasta with Potatoes and Mussels

A creamy and flavourful Italian pasta dish with potatoes and mussels, cooked in mussel broth and finished with pecorino cheese.

Ingredients
10 items- MusselsClean and debeard before cooking
- Olive OilExtra virgin olive oil, generous drizzle
- GarlicWhole cloves
- ParsleyFresh, divided: some for cooking mussels, rest for finishing
- Chili PepperCrushed dried chili pepper
- White WineDry white wine or sparkling wine, to deglaze
- PotatoesPeeled and cut into cubes
- Tomato PasteA small amount for color
- PastaCalamarata or mixed pasta types
- Pecorino RomanoGrated, generous amount
Method
- Clean the mussels and place them in a large pan.
- Add a generous drizzle of oil, garlic cloves, parsley, and crushed chili pepper.
- Open the mussels: pour in white wine or sparkling wine, cover, and cook for 5 minutes until they open.
- Remove the mussels from the pan and shell them.
- Peel the potatoes and cut them into cubes.
- In a pot, filter the mussel cooking liquid. Add the potato cubes and a pinch of tomato paste for color. Cook the potatoes in the broth.
- Add the pasta (calamarata or mixed pasta) to the potato broth and cook until al dente.
- Finely chop a bunch of fresh parsley.
- When the pasta is ready, add the shelled mussels, chopped parsley, and a generous amount of grated pecorino cheese. Mix well until creamy.
- Plate and serve immediately.
