A classic Neapolitan comfort dish: creamy, sticky pasta with potatoes and smoked provola cheese, cooked slowly to achieve the perfect 'azzeccosa' texture.

- 1 pcsOnion
- 1 pcsCarrot
- Basil StemsBasil stems, for flavor
- 1 pcsChili PepperWith seeds, for heat
- Cherry TomatoesCherry tomatoes, halved or whole
- PotatoesPeeled and diced small
- 250 gMixed PastaMixed pasta shapes, or use leftover pasta
- Smoked ProvolaSmoked provola cheese, diced
- Parmigiano ReggianoGrated
- SaltTo taste
- Black PepperFreshly ground, to taste
- Fresh BasilFor garnish
Method
- Heat olive oil in a large pot over low heat.
- Finely chop onion, carrot, and basil stems. Add to the pot and sauté until softened.
- Add chili pepper (with seeds) and cherry tomatoes, and sauté briefly.
- Dice potatoes into small cubes and add to the pot. Season with salt and pepper. Cook, stirring.
- Add a splash of water and cook until potatoes are almost tender.
- Add the mixed pasta. Add water gradually as needed, stirring, until pasta is al dente and the mixture is thick and creamy (azzeccosa).
- Remove from heat. Add cubed smoked provola cheese and grated Parmesan. Stir vigorously to melt and combine.
- Drizzle with a little extra olive oil and mix.
- Garnish with fresh basil leaves and serve.
