Pasta with Peppers, Capers and Tuna

This is a simple but richly flavored first course, perfect for days when you want something quick and tasty. Pasta with peppers, capers, and tuna is a summer recipe that can be made all year round.

  • 1 pcsBell PeppersMay be cut into pieces or thin strips
  • 1 pcsGarlic
  • CapersAdded in two stages: first with garlic and then again with tuna
  • TunaCanned tuna, drained
  • BasilFresh basil, torn
  • Olive OilExtra virgin olive oil, for cooking and finishing
  • PastaTortiglioni or other short pasta

Method

  1. Clean the peppers by removing the fibrous white parts and seeds.
  2. Heat a good drizzle of olive oil in a pan.
  3. Add one clove of garlic and some capers.
  4. Cut the peppers (into pieces or thin strips) and add them to the pan.
  5. Cook the peppers for about 15 minutes or longer until they are very soft.
  6. Meanwhile, bring a pot of water to a boil and cook the pasta (tortiglioni).
  7. When the peppers are ready, add the drained tuna and more capers.
  8. Add a few torn basil leaves. Let it flavor over low heat without cooking further.
  9. Drain the pasta al dente and transfer it to the pan with the sauce.
  10. Add a little pasta cooking water and let the pasta finish cooking in the sauce for a couple of minutes, stirring to combine well.
  11. Serve with fresh basil and a drizzle of raw olive oil. Optionally, add a pinch of chili or black pepper.
