A simple, quick, and economical pasta dish made with tuna, olives, anchovies, and sun-dried tomatoes. Perfect for Christmas Eve or any busy day.

- Garlic
- Extra Virgin Olive OilSicilian olive oil preferred
- Chili PepperTo taste
- Pomodorini SecchiSun-dried cherry tomatoes
- Taggiasca OlivesSmall black olives from Liguria
- Olive di CastelvetranoGreen olives from Sicily, crushed
- Tuna in OilHigh-quality tuna packed in olive oil, flaked
- LinguineSpaghetti can be used instead
- ParsleyFresh parsley, chopped
Method
- Rinse and dry salt-cured anchovies, remove spines, and chop finely.
- In a pan, heat olive oil and add whole garlic cloves; let them brown gently.
- Lower the heat, add the chopped anchovies, and stir until they dissolve into the oil.
- Add a pinch of chili pepper and a splash of water.
- Add chopped sun-dried tomatoes and both taggiasche and Castelvetrano olives. Let them heat through.
- Cook the pasta (preferably linguine or spaghetti) in salted boiling water until very al dente.
- Transfer the pasta directly into the pan with the sauce.
- Add a generous amount of tuna (preferably high-quality oil-packed tuna, flaked into chunks). Add some pasta cooking water and stir.
- Continue cooking, adding pasta water little by little until the pasta is perfectly al dente and the sauce becomes creamy.
- Remove from heat, garnish with fresh parsley, and serve immediately.
