Pan-fried potatoes with turnip tops (cime di rapa), onions, garlic, and a soft sheep and goat cheese, cooked outdoors in the Sila National Park. A simple yet delicious Calabrian dish.

- Olive Oil
- Garlicwhole cloves
- Onionroughly chopped
- White Wine
- Broccoli Rabe
- Saltto taste
- Caciotta di Pecora e Caprain pieces, to melt
- Chili Pepper(optional) — optional, serve on the side
Method
- Cut the potatoes into cubes.
- Heat olive oil in a cast iron pan.
- Add the potatoes, whole garlic cloves, and roughly chopped onion. Sauté until golden.
- Deglaze with a splash of white wine.
- Add the turnip tops (cime di rapa).
- Add a little water to help cooking.
- Season with salt.
- When the potatoes are cooked and crispy, add the cheese in pieces and let it melt.
- Serve with chili pepper on the side for those who want.
