Pennette with Salmon

A rich and creamy 80s-style pasta dish with smoked salmon, fresh cream, and a touch of tomato. This indulgent recipe uses simple ingredients for an unforgettable comfort meal.

Ingredients

- ButterA knob
- 300 gSmoked SalmonSmoked salmon, preferably wild if possible
- Black PepperTo taste
- Gin (or Vodka)(optional) — A splash; use either gin or vodka
- Tomato PassataAbout 1 tsp
- Fresh CreamA big glass; approx. 200 ml
- ParsleyA bunch
- PennettePasta, about 400 g for 300 g salmon
Method
- Finely chop the shallot.
- In a pan, melt a knob of butter over high heat and add the chopped shallot. Caramelize until golden.
- While the shallot cooks, cut the smoked salmon into thin strips.
- Add the salmon to the pan and toast for about 2 minutes, stirring.
- Season with black pepper (no salt needed as the salmon is salty).
- Deglaze with a splash of gin (or vodka) and let the alcohol evaporate completely.
- Add a small amount of tomato passata (about a teaspoon) and stir.
- Pour in the fresh cream and cook the sauce for about 5 minutes, until thickened.
- Meanwhile, chop the parsley finely.
- Cook the pennette pasta in salted boiling water until al dente.
- Drain the pasta and transfer it to the pan with the sauce. Stir well and finish cooking for 2 minutes.
- Add some of the chopped parsley, mix, and turn off the heat.
- Serve with a sprinkle of fresh parsley on top.
