Chili Peppers in Oil

A method for preparing chili peppers in oil for long-term preservation. The peppers are ground, salted to draw out moisture, then mixed with vinegar and olive oil before being jarred and left to mature for a few days.

Method

  1. Wash the chili peppers thoroughly.
  2. Dry them with a cloth, removing as much water as possible.
  3. Remove the stems using a knife or directly with your hands.
  4. Grind the chili peppers in a blender or grinder.
  5. Place the ground peppers in a bowl and add salt.
  6. Transfer the mixture to a perforated colander to allow the vegetable water to drain. Cover and leave for at least 24 hours.
  7. After 24 hours, discard the water that has collected underneath.
  8. Add a tablespoon of vinegar and mix well.
  9. Start adding extra virgin olive oil and mix occasionally, continuing until well combined.
  10. Sterilize small jars and dry them thoroughly.
  11. Fill the jars with the chili mixture.
  12. Add a little oil into each jar and use a spoon to push the oil down to the bottom.
  13. Add more chili, then more oil, repeating until the jar is full.
  14. Cover completely with oil, cap the jar, and let it sit for 4-5 days before consuming.
