Green River Peppers

A traditional Italian side dish made with green peppers, slowly fried and then simmered in a light tomato sauce with garlic and fresh basil. Perfect served with mozzarella, meat, or as a pasta sauce.

Ingredients
5 items- Peperoncini VerdiGreen peppers, also called 'puparuliell ro ciumm' in dialect
- Extra Virgin Olive OilFor frying and the soffritto
- GarlicA few cloves, to taste
- Cherry TomatoesCanned or fresh cherry tomatoes
- BasilFresh basil leaves
Method
- Clean the green peppers: remove the stem and seeds.
- In a pan with extra virgin olive oil, fry the peppers over low heat until they are slightly wilted.
- Set the fried peppers aside.
- In the same pan, add a drizzle of oil and some garlic to make a soffritto.
- Add the cherry tomatoes (canned or fresh).
- Return the fried peppers to the pan and add fresh basil.
- Cook gently over low heat to let the flavors meld.
- Serve, garnishing with a fresh basil leaf.
