A simple and flavorful Sicilian-style pan-seared swordfish with cherry tomatoes, red onion, chili, and Taggiasca olives, finished with a splash of vinegar.

Ingredients
8 items- Olive OilTaggiasca olive oil preferred
- Red OnionPreferably from Tropea
- Chili PepperFresh chili pepper, to taste
- Cherry TomatoesDatterini or cherry tomatoes
- Taggiasca OlivesTaggiasca olives, pitted or whole
- VinegarA splash, preferably white wine vinegar
- SaltTo taste
- SwordfishFresh swordfish fillet, skin-on
Method
- Heat a pan until it is very hot.
- Add olive oil.
- Add sliced red onion and chili, and cook until the onion softens and becomes slightly golden.
- Add the cherry tomatoes and crush them slightly with a spoon.
- Add the Taggiasca olives.
- Add a splash of vinegar and a pinch of salt.
- Place the swordfish fillet skin-side down in the pan.
- Cook until the white color appears on the sides of the fish, then flip it.
- Add a little more salt to the fish.
- Turn off the heat and let the fish rest in the pan for a few minutes.
- Serve immediately.
