Ingredients

- 10 gFine Salt
- 15 gExtra Virgin Olive Oil
- 5 gFresh Brewer's Yeast
- PumpkinUsed for the cream and roasted cubes.
- RosemaryFor the roasted pumpkin cubes.
- Pecorino RomanoShaved.
- Roasted and Salted Peanuts
- Liquorice Powder
Method
- Combine 1 kg of tipo 2 flour, 750 g of water, 10 g of salt, 15 g of extra virgin olive oil, and 5 g of fresh brewer's yeast. Knead until smooth and homogeneous.
- Place the dough in glass bowls and refrigerate for 48 hours.
- Dust the work surface with flour, take the dough, and press it into the shape of a pala (Roman pizza base).
- Spread pumpkin cream (made by roasting pumpkin, then blending with oil and salt) evenly over the base.
- Add roasted pumpkin cubes seasoned with rosemary on top.
- Bake in the oven at 350°C for 2-3 minutes.
- Remove from the oven, top with shaved pecorino cheese, roasted salted peanuts, and licorice powder.
