Indian Style Pepper Chicken

- YogurtPlain yogurt

Method
- Marinate the chicken: remove the skin from the thighs and drumsticks. In a bowl, crack black peppercorns coarsely in a mortar. Add to the chicken along with lemon juice and salt. Massage well. Toss in the lemon peels. Cover and let marinate for at least 30 minutes (preferably 1 hour).
- In a large skillet, heat olive oil and brown the chicken pieces on all sides. Remove and set aside.
- In another pan, heat a little oil. Add sliced onion, garlic, green chilies, and sliced ginger. Cook until softened, about 10 minutes.
- Add cinnamon, cardamom, and cloves to the pan. Stir for a minute until fragrant.
- Add the spice paste (pasta) and cook over low heat for 4-5 minutes, stirring constantly.
- Add yogurt and a little boiling water. Mix well.
- Add garam masala and stir to combine.
- Return the chicken to the pan. Cover partially and simmer on low heat for at least 1 hour, turning the chicken halfway through. Add a splash of water if sauce becomes too dry.
- Serve with freshly cracked black pepper and sliced green spring onions on top.
