Grilled Chicken with Oriental Marinade and Smoked Sauce

The best grilled chicken I've eaten on vacation, inspired by a restaurant in Bali. The chicken is marinated with lemon, lime, chili, ginger, and spring onion, then grilled until tender. It is served with a smoky sauce made from grilled bell peppers, tomatoes, onion, and charred cabbage, all blended together. A truly flavorful and aromatic dish.

- Chili PepperUse fresh red chili, to taste
- GingerFresh ginger, a small piece
- Spring OnionSpring onion, chopped

- Olive OilExtra virgin olive oil
- 2 pcsBell PepperRed bell peppers
- TomatoFresh tomatoes, 2-3 depending on size
- 1 pcsOnionYellow onion
- Savoy CabbageA few outer leaves of savoy cabbage, grilled
- Peperoncino (per la salsa)More chili for the sauce, to taste

Method
- Prepare the marinade: squeeze the juice of lemons and lime into a bowl. Add chili pepper, ginger, spring onion, salt, and olive oil. Mix well.
- Add the chicken thighs (legs and thighs) and massage with the marinade. Cover and refrigerate for at least 12 hours, or as long as possible.
- Meanwhile, prepare the grill or oven. If using a grill, light the charcoal and wait until it's glowing.
- Grill the bell peppers, tomatoes, and onion until soft and slightly charred on all sides.
- Grill the cabbage leaves until wilted and charred in places. Set aside.
- Peel the onion (remove the charred skin) and place in a blender along with the grilled peppers and tomatoes. Add chili pepper, ginger, salt, and olive oil. Blend until smooth.
- Grill the marinated chicken on the grill or in the oven, turning occasionally, until cooked through and golden brown (time depends on thickness and heat).
- To serve: spread a generous spoonful of the sauce on a plate. Place the grilled chicken on top. Add the charred cabbage leaves and drizzle with a little extra sauce.
