Grilled Chicken with Oriental Marinade and Smoked Sauce

The best grilled chicken I've eaten on vacation, inspired by a restaurant in Bali. The chicken is marinated with lemon, lime, chili, ginger, and spring onion, then grilled until tender. It is served with a smoky sauce made from grilled bell peppers, tomatoes, onion, and charred cabbage, all blended together. A truly flavorful and aromatic dish.

Method

  1. Prepare the marinade: squeeze the juice of lemons and lime into a bowl. Add chili pepper, ginger, spring onion, salt, and olive oil. Mix well.
  2. Add the chicken thighs (legs and thighs) and massage with the marinade. Cover and refrigerate for at least 12 hours, or as long as possible.
  3. Meanwhile, prepare the grill or oven. If using a grill, light the charcoal and wait until it's glowing.
  4. Grill the bell peppers, tomatoes, and onion until soft and slightly charred on all sides.
  5. Grill the cabbage leaves until wilted and charred in places. Set aside.
  6. Peel the onion (remove the charred skin) and place in a blender along with the grilled peppers and tomatoes. Add chili pepper, ginger, salt, and olive oil. Blend until smooth.
  7. Grill the marinated chicken on the grill or in the oven, turning occasionally, until cooked through and golden brown (time depends on thickness and heat).
  8. To serve: spread a generous spoonful of the sauce on a plate. Place the grilled chicken on top. Add the charred cabbage leaves and drizzle with a little extra sauce.
