Fried meatballs made with a blend of three meats, seasoned with garlic, cheese, parsley and lemon zest, breaded and pan-fried until golden.

Ingredients

- 300 gVeal
- 400 gMaiale
- Saltto taste
- Pepperto taste
- 1 pcsGarlic
- 1 pcsBoiled Potatoboiled
- 1 pcsPane Ammollatoslice of stale bread soaked in water and squeezed
- 80 gParmigiano
- 80 gPecorino
- Parsleychopped
- Lemon Peelzest of 1 untreated lemon
- 1 pcsEggfor the mixture
- Pane (per la panatura)breadcrumbs, as needed

Method
- Combine the beef, veal and pork meats and begin to knead them.
- Add pepper, salt, grated garlic, mashed boiled potato, squeezed soaked bread, Parmesan, Pecorino, chopped parsley and grated lemon zest.
- Add the egg and knead until homogeneous.
- Let the mixture rest in the refrigerator for about 3 hours.
- After resting, shape the mixture into oval meatballs, not too thick.
- Dip each meatball in beaten egg, then in breadcrumbs, pressing well to adhere.
- Let the breaded meatballs rest in the refrigerator for at least 1 hour.
- Heat a thin layer of oil in a pan and cook the meatballs for 4 minutes per side, until golden. Drain on paper towels.
